Chaman olu .....

In my life there are few person's who have influenced me and I always wanted to cook something different for them and one person is my dear old man who has been pillar for me for long years, he has seen me growing as a woman and always guided me through, for him I thought I should learn some real Kashmiri pundit dishes, what I have observed while out Kashmiri dishes in home is they use dry ginger powder, fenugreek, asafoetida in their food with lot of cloves, red chilly powder ........

In kashmiri Paneer is called as Chaman and potato is called Olu, for this dish

 First cut cottage cheese Paneer into cubes and the sprinkle some salt over it and fry it

 Secondly cut the potatoes in thin circular pieces and then take oil in non stick kadhai and then add 3-4 pieces of cloves, 2-3 pieces of green cardamoms and then add half tea spoon of turmeric powder , salt according to taste and allow it to cook for 5-7 mins in sim

 Then after the potatoes are cooked add the fried paneer cubes and add 75ml of milk and half table spoon of fresh curd into the kadhai.

 Heat it for 3-4 mins in sim and then serve with rice (bhat in kashmiri) :)
