Wheat Based Preparation
For the past 4 years I have been travelling all around India, as of Feb 2012, I was based out of Gurgaon but this month I moved down to Bangalore for good.....Though north India has Roti as one of the component of staple food and we have in Rajasthan cuisine Dal dhokli as one wheat based dish wherein wheat balls are been served in Yellow dal made in the form of Curry and then we have the famous Daal Baati with Churma as one more famous food from Rajasthan (In Rajasthani Cuisine there is usage of Ghee as the component of tadka with Lal mirch , zeera with tench of Asfoetida (Hing)) but down south we have this Kuttu parotha, mostly its served in Non veg platter, where in Malabari roti is crushed and blended with Egg Bhurji or in Kerale in small shops its served with Beef or Chicken Curry, I am lucky that I have tasted the food of both the regions
