Kokam Juice – Sam shots -5ml of Kokkam Syrup, 5 ml Vodka, 10
ml water and dash of Lemon
After finishing my ME course, I got place as Molecular
Biologist with Wockhardt Research in Aurangabad, there my BItsian Senior
Pradeep pagariya was staying with his family and that pawam soul used to call
us all for lunch to his place, in 2005 for the first time I got the taste of
Kokkam juice. After going to Delhi this delicacy was rare but last year due to
some project work I travelled down to Goa, there is north goa got the chance to
taste it again? After moving down to Bangalore I got to know Vijay Pai in my
new office and he is passionate about food like me, so I told him that I love kokum
juice and I would actually like to see the fruit, so this another pawam soul
got Kokum fruit for me
My procedure of preparation of Kokum Juice Concentrate

Take the kokum fruits, peel of the outer cover
and dry it in sun for 4-5 Hrs as later u can use it for tangy curry

Take 600ml of drinking water in a pan heat it
·
Add 100 gms of sugar and add 4-5 Kokkam fruits
outer cover into the syrupy solution

Heat it till a certain consistency and then cool
down the solution and put it in a bottle in fridge at 10-15 Celsius
For Sam Shots: When serving take 5 ml of syrup and 30 ml of
cold water, serve with a dash of lemon and 5 ml of Vodka or serve virgin way.
