Chocolate Sponge Cake

Every bakers use chocolate sponge for baking the base of their frosted or ganache cake.

Here is the simple recipe of Chocolate cake:

1 Cup maida (all purpose flour)
1/4 cup cocoa powder (depends on your choice of brand but best brand gives a distinct flavor)
1 Tsp Baking powder 
1/4th  Tsp Baking soda (You can increase to max 1/2 tsp)
200 gms milk maid (I prefer nestle rather then Amul)
75gms of salted butter at room temperature 
1 Tsp Vanilla essence 
3/4 th cup max water at room temperature 

Process to follow:

Take all the dry ingredients in a separate bowl and sieve and in a separate bowl mix beat condensed milk and butter till its pale in color consistency and has a fluffy texture. Add vanilla essence and then mix it well. Pour in the dry ingredients some at a time and then add water and mix them in cut and fold method.

Preheat the oven at 170*c for 10mins and then in a greased pan pour in the batter and bake it @170 first 20 mins and then 180* for next 10 mins till the toothpick comes out clean. take out of oven after 5 mins standing and let it cool in the cooling rack for another 40 to 45 mins 

For Vanilla sponge just remove the cocoa powder and make it in same process
