Dhokar Dalna..................

Dhokar Dalna (One of my all time favourite dish)
For this pure vegetarian Bengali dish

1. First soak equal quantity of Mutter and Channa dal and keep it overnight, then grind into thick paste.
2. After grinding add little fennel or cumin seeds and steam it or rather put this paste over non stock tave in a round shape and then pour 1 tea spoon of oil along the sides , fry it vice versa both the sides.
3. After frying cut it into diamond shaped pieces. On the other side cut medium size potato in ovoid shape and finely chop one medium size tomato.
4. After words heat one and half tea spoon of oil in kadhai add Panch phoron (Mixture of Cumin, Mustard, fennel, fenugreek and Kalunji) and one piece of bay leaf into the pan, then add one tea spoon of fresh ginger paste, add potato then little of turmeric, red chilli powder, freshly grinded cumin seed powder, garam masala powder, sugar and salt according to taste.
5. When the potatoes are half cooked, and then add diamond shaped dhoka pieces in the kadhai and finely chopped tomato (or Tomato Puree). Add water according to your preference for type of curry.
6. After curry is done add one tea spoon of Desi ghee and feel the aroma of authentic Bengali Dhokar
