My version of hing pickle

Last year had been to varanasi for dev diwali and had tasted for the first time hing wala achar. I love raw hing fragrance though my husband can't tolerate it. This time while celebrating our 5th anniversary in backwaters of Kerela , there were medium size raw mangoes in trees near a small jetty so i asked R to pick some and he jumped n did many acrobats and plucked 3 raw mangoes, i stored them in my bag and the day after i landed in pune....sochaa let me try my own version of hing wala pickle as it is season's first mangoes from southern most tip of india........

Ingredients required:

  • Raw mangoes (medium 
  • Organic Red chilly powder (1Tsp)
  • Organic haldi (1/2 Tsp)
  • Raw hing (5gms ) crush it 
  • Salt according to taste
  • Heat sufficient quantity of raw mustard oil and let it cool


Wash the raw mangoes, dry it with fresh cloth and then cut it into small pieces according to the bite size u like, i like it small. then add all the dry ingredients and mix it and then pour oil and then put it in a sterilized glass container and keep it in a place where you get sun exposure, keep it out for 4 days and then taste it,  leave it to mature further.....
