Aloo ka achar my style

i first tasted this aloo ka achar, a til preparation at my friend Amit's place in delhi. His mother made it for us and it was really very delicious. For this preparation following things are required
  • 250 gms of small potatoes boiled (if you wish you want to peel then do i kept it like that)
  • 1 Tbs of til, peanuts , dry coconut (Coconut is optional), roast and grind into powder, just 30 sec or more grinding. 
  • 1 tsp of sabot jeera or cumin seeds
  • Tomato puree (home made in which i had reduced it with little chilly powder n coriander powder) optional
  • Oil 5 to 6 tbs 
  • Salt according to taste 
  • 1 tsp sugar 
In a pan at low to medium flame, add 4 tbs of vegetable oil and then put the boiled potatoes and let them shallow fry with little of salt sprinkled over and then after frying lightly from both the side keep it aside.

In the same pan take additional 1 tbs of oil, heat it at low to medium and then add sabut jeera and let it splutter, then add the shallow fried potatoes, roasted powder, salt and sugar according to your taste and mix and steam for 3 to 4 mins. if you want you cab add tomato puree after adding roasted powder.

PS:Never grind the roasted portions when they are hot, cool it down and then grind and also make sure you do not grind into fine paste or else it would start releasing oil.
