Breakfast log- Open sandwich and pancake

For me breakfast are kind of very essential, i munch in breakfast rather than lunch or dinner. If i am up early which is not the case most of the time, i first have hot water and after that half an hour later milk tea and another half an hour later breakfast. But on a usual day when i need to be very quick i would rather make an open sandwich, poha, upma, appe, eggs sandwich, salami or sukhsukha.....

Today i had enough time so made open sandwich and pan cake (Used betty Pan cake mix)

For the open sandwich
1 piece of brown bread
1 tsp of green chutney or sauce or mayo from any brand (I like veeba)
1 to 2 slices of round tomato, onion and cucumber
1 poached egg (No runny center for this)
Salt and black pepper according to taste

For making sandwich:
Take a grill pan or normal pan, toast bread from both side, then add the chutney or sauce or mayo, put the poached egg, slices of tomato, onion and cucumber, sprinkle black pepper and salt according to taste

For the pancake: Take pancake mix, add milk and make a semi thick batter and put it in a pan kept in low to medium heat, add oil from all the sides (just 1/2 tsp is enough) , let it become firm from one side and then toss to another side, add homemade chocolate peanut mix, or peanut butter or pour pancake syrup of your choice.
