Fig & strawberry cheese cake

I love making cheese cake whether its baked one or non baked one, as my husband and myself have not many sweet options to eat so the best thing is that we bake in home.

For the crusty base:

  • 6 Tbs of soft salted butter
  • 1 packet of sugarfree oats cookies which is need to be crushed

Mix both and take a 4 inch pan and press the crust base and allow it to cool it in fridge for 2-3 hours

For Cheese cream ingredients required:

  • 200gms of plain cream cheese
  • 3/4 cup Amul cream
  • 4 tbs of sugarfree mix it
  • Fruit pulp (Cut 6 pieces of fig
  • and 4-5 pieces of strawberry, with 1 tbs of sugarfree melt them and make it into jam consistency)

Fold all together and put it above the biscuit crust and tap it so its a uniform mix

meanwhile preheat the oven with water bath at 180*c for 10mins and then bake it at 180*c for 35 to 40 mins, let it cool and then keep it in fridge with cling wrap

For the garnishing: cut 200 gms of strawberry, let it melt and when it starts thickening add sugar free substitute, cut strawberry and fig and decorate it.
Note: Added very less Sugar substitute as fruits fructose provided max taste
