Steamed Paneer (Kerela n bong fusion)

last month had been to kerela after 3 years and the day we landed in kochi and by coincidence we were staying in grand , so ordered their traditional fish thali, ammachi prawn fry and karimeen pollichatu in banana leaf, its a must try and i shall also recommend you to eat in paragon in lulu mall, as i had tasted its food in calicut and still can't forget the taste of malabari biriyani. After coming back i tried Karimeen version with prawns but i steamed it and it came out very well, so as family friend was coming to our place i made steamed version with a twist of bong spice.

Ingredients required:

  • 12 peppercorns
  • 6-7 fresh curry leaves 
  • 2-3 medium onions diced 
  • 1 Tsp each of ginger and garlic paste
  • 1 Tbs of coriander & red chilly powder
  • 1/2 tsp of haldi 
  • Bong Mix paste (1tbsp of dry coconut, khus khus, cashew nut and magaj, soak in 3 tbs of luke warm water for 5mins and then grind it
  • 2 pieces of banana leaf 


Procedure:
Take 150 gms of paneer block i took amul paneer, cut into square blocks and with the knife mark it all side so the masala can go inside, sprinkle Little of salt and in a pan sprinkle oil and let the paneer sizzle from all sides and after frting put them in a luke warm water, so they are soft. Keep it aside.

In a separate pan add 1tbs of oil (Vegetable oil), add black pepper, curry leaves diced onions, let the onions turns slightly red and then add 1tsp of ginger and garlic paste, mix it till the raw smell of both ginger and garlic goes off, add dry ingredients coriander powder, haldi, lalmirch powder, mix it, add 2 tbs of Bong mix paste and mix it and then add juice of one lime. Let it cool and then grind it in a mixie for 30sec.

Take banana leaf and wash them and apply little of oil and put one piece of paneer, put the mixture and over the top add two pieces of tomato, lemon piece, and 1 green and tie it with cotton string and steam for 20 to 25 mins and after it cools down serve it with hot roti.
