Quick Kerela vegetable stew
I love veg stew, when i used to stay in bangalore my office was near round the corner to Koshy's in lavelle road, famous for its sunday breakfast for Appam and vegetable or mutton stew. As i used to stay in vasanth nagar, i used to come down and eat it on sunday's sometime at Koshy's. Also in Pune in south indies you get the same flavor of vegetable stew, R loved it when he tasted it for the first time.
Yesterday i was in a mood to make it but i did not have the first and second extract of coconut milk so my cook mind thought of substitute, i usually have Kara or Dabur coconut milk in my pantry and also the dried form from nestle which you get as a powder form easily from Amazon or big basket or any other superstore easily. Also i twisted the preparation by tossing onion and curry leaves and ginger in 1 tsp of coconut oil. In original process its added just like that.

Ingredients required
- 9 to 10 pieces of french beans
- 1 carrot (I took the red one as i love it more than the english carrot and its still available in pune during this season)
- 1 medium onion
- ginger cut into long strands (7 to 8 strands around 3mm)
- peas optional (as sweetness is little less during this time you can add it)
- 1 small potato (You can take a medium one)
- 1 tsp Coconut oil
- 4 Tbs Maggi coconut milk powder
- Water as per requirement of steaming in pressure cooker
- Salt according to taste
- Curry leave according to taste (I use slightly more as i love its flavor)
Procedure:
In a pressure cooker add the washed veggies (Beans, peas, carrot and potato) add required amount of water to steam and put it at pressure in medium to low heat and let it whistle for 1 time and then let it cool and till the all of the steam is released, take at least 1/2 cup of water from steamed vegetable and mix it with coconut powder, avoid any lumps and mix it with the veggies. Keep it aside
In a separate pan in medium to low flame , add cocnut oil add curry leaves, then onions and ginger and let it saute for 1 to 2 mins max and then add the veggies which were set aside in a pressure cooker and keep it in heat till one boil and then take it out.
I served it with Dosai but usually its served with appam or iddiyapam in traditional kerela houses.
