Diet Strawberry pannacotta
Strawberry's are in season, last week made cheese cake so this week though of making the Italian desert with my twist, as i made the sugar free version, its similar to gelato in terms of its creaminess.
Ingredients required:
15 to 16 strawberry's
250 ml cream
200ml milk (full cream is better)
5 to 6 Tbs of Sugar free
Gelatin (10 gms) , you can take more as per your requirement
First Step: Strawberry crush
In a pan cut the strawberry's into small pieces and in medium sim let them simmer for 10 mins or so, then add 1 Tbsp sugar free and mix it well and cool it. (I did not strain it as i wanted chunks of strawberry in my panna cotta
Second Step:
In a bowl take the required quantity of gelatin in 2 Tbs of cold water and keep it aside.
Third Step:
In another pan heat it low to medium, add cream and milk, mix well and add the rest 5 Tbs of sugar free and then heat it till boil, then take out the pan and the mix the strawberry crush and little by little add the gelatin mix, while mixing there will be bubbles, when you are putting the mix in ramekin or silicon bowls avoid the bubble part. Allow the mixture to set for 4 to 5 hours.
