Breakfast log: Shukshuka
As i have mentioned before that in my home Sunday ho ya Monday roz khao andey, so i tried making shukshuka, i didnt made the gravy one which you usually get but i make the dry version which can be served with one piece of bread, roti or even with maggi in which starch has been removed.
Ingredients required:
In a pan at medium to low add 1 tbs oil (Vegetable oil or olive oil), add the thinly chopped onions and then add salt , so it browns faster and then add all the cut peppers, green chilly shopped in fine pieces and jeera, pepper, parika powder, mix them well for 2 to 3 mins, till they soften and then add the chopped tomatoes and close the lid for 2 mins, till the tomatoes also soften and its blended in the mix and then break the eggs over the mix and add pepper from top over the eggs and close the lid, i like the center not runny so close the lid for 3 to 4 mins max and your shukshukha is done, i usually serve it with brown bread toasted with garlic butter, this time i served it with roti toasted with garlic butter and oats Maggie.

- 1 medium onion and tomatoes thinly chopped
- 1 each small capsicum red, yellow and green pepper thinly chopped
- 1 green chilly (Its optional for Indian taste buds)
- 1 tsp jeera, pepper and paprika powder
- Salt and oil according to your requirement
