Breakfast Log: Veggies Egg Omelet

Sunday ho ya monday roz khao andey, this slogan is applicable at my in laws place and especially with R. Today in the veggie tray so so many cut veggies (Green, red and yellow) so thought of making veggies omelet.

Ingredients required:

  • 1 big size onion (Cut into small pieces)
  • 70 gms of each green, red and yellow pepper
  • 1 medium tomato cut into small pieces
  • 1/2 tsp paprika powder or red chilly powder
  • 1 tsp black pepper
  • 1 1/2 tsp jeera powder
  • Hero ingredients: 2 large eggs (Beat them)

Salt and oil according to your need

Procedure:
In a pan i took about 2 tsp of vegetable oil and add the cut onions add little salt as it will quicken the process of onion cooking and then after 2 mins add cut peppers (Small pieces) , mix it add paprika, pepper and jeera powder mix it well and then after 3 to 4 mins add chopped tomatoes, put the lid and let it cook for 2-3 mins and then add the beaten eggs  (You can just use the egg white) over the sorted vegetables and let it steam with lid closed for 2 to 3 mins and then flip into another side and then serve it with a piece of brown bread.

PS: you can also use mushrooms and spinach optional
